Mint Tomato Chutney

Ingredients
•
Mint leaves
- 1 cup
•
Onions (peeled, small)
- 10
•
Tomatoes (diced)
- 2
•
Urad dal
- 1 tablespoon
•
Green chillies (chopped)
- 5
•
Coconut (grated, fresh)
- 2 tablespoons
•
Tamarind (soaked in water)
- small lime size
•
Salt
- as required
•
Oil (for roasting & for seasoning)
- as required
Ingredients For Seasoning
•
Mustard seeds
- ¼ teaspoon
•
Asafoetida
- 2 pinches
Method
1.
Roast
urad dal
with ½ Teaspoon of
oil
until golden.
2.
Add
coconut
at the end,
fry
until it changes its colour.
3.
Take out
from fire and transfer to a plate.
4.
Heat
another teaspoon of
oil
in that same
frying
pan and
fry
chopped
green chillies
, small
onions
and then
mint leaves
,
tomatoes
.
5.
Fry
until moisture is evaporated and allow to cool thoroughly.
6.
Add
salt
,
tamarind
to that and
grind
all the roasted, fried
ingredients
together to chutney consistency.
7.
Heat
½ Teaspoon of
oil
add
mustard seeds
, allow to crackle,
add
asafoetida
in that hot
oil
and
add
to chutney.
8.
Mix
well and
serve
.
