Gherkins Chutney

Ingredients

Coconut (grated, fresh)
- ¾ cup
•
Salt
- as required
•
Tamarind (soaked & extracted)
- big lime size
•
Jaggery (grated)
- a little
•
Green chillies
- 4
•
Asafoetida
- 2 pinches
•
Gherkins
- 12
•
Onion (big)
- 1
•
Oil
- a little
•
Mustard seeds
- ½ teaspoon
•
Cumin seeds
- ¼ teaspoon
Method
1.
Cut
onions
and
gherkins
finely.
2.
Heat
little
oil
in a
frying
pan,
add
mustard
,
cumin
and then
fry
onion
,
gherkins
.
3.
Fry
well until raw flavour of
gherkin
is lost.
4.
Grind
coconut
,
salt
,
jaggery
,
tamarind
,
chillies
and
asafoetida
together to thick chutney consistency.
5.
Add
fried
ingredients
and
grind
very lightly.
