Date Fudge Cake

Ingredients

• • Maida - 1 ½ cups
• • Soda-bicarbonates - 1 teaspoon
• • Salt - a pinch
• • Sugar (powdered) - 1 ½ cups
• • Butter - ½ cup
• • Dates (cut into tiny bits) - 1 cup
• • Milk - 1 cup
• • Vanilla essence - 1 teaspoon
• • Eggs (separated) - 2
• • Caramelized sugar - 1 teaspoon
• • Cocoa/Drinking chocolate - 1 ½ tablespoons
• • Instant coffee powder - 1 ½ teaspoons

Method

• 1. Sieve flour with soda and salt for three times.
• 2. Take warm milk in a cup and mix cocoa, coffee powder, and caramel sugar.
• 3. Cream butter, sugar and egg yolks till fluffy.
• 4. Add maida little by little with chopped dates and essence.
• 5. Beat with a wooden laddie in circular motion.
• 6. Finally add stiffly beaten egg whites and fold gently.
• 7. Bake in a moderate oven till brown on top.
