Butter
- ¾ cup

- 1 teaspoon

Salt
- ½ teaspoon

Soda
- 1 ½ teaspoons
•
Orange juice
- 1 ½ cups
•
Candied cherries
- a little
•
Cashew nuts (cut into stripes)
- ¼ cup
•
Raisins
- 1 cup
•
Curd (fresh, thick)
- 1 cup
•
Candied orange peels (diced)
- ¾ cup
Method
1. Sieve flour with
salt
and
baking
powder
for three times.
2. Divide
sugar
into half.
3. Beat one half with
curds
,
mix
in diced
cherries
,
cashews
,
raisins
and
orange
peel
.
4. Beat other half of the
sugar
with
butter
and
egg
yolks.
5.
Add
orange juice
,
curd
mixture
,
essence
, caramel
sugar
and flour.
6.
Mix
gently with wooden laddie.
7. Finally
add
stiffly beaten
egg
white.
8. Fold in gently and
bake
.
