Pineapple Upside Down Cake

Ingredients
•
Butter (soft)
- 2 tablespoons
•
Caramelized sugar
- 2 tablespoons
•
Salt
- a pinch
•
Pineapple (sliced)
- 1
•
Sugar (powdered)
- ¾ cup
•
Baking powder
- 1 teaspoon
•
Eggs (separated)
- 2
•
Maida
- 1 cup
•
Walnut pieces
- a few
•
Cherries (for decoration)
- a few
•
Pineapple juice
- ½ cup
Method
1. Sieve flour with
baking
powder
and
salt
for three times.
2. Separate
egg
yolks from whites carefully.
3. Apply
butter
generously in a
baking
dish and arrange
pineapple
slices on that.
4.
Pour
caramelized sugar
, in between the gaps.
5. Beat
egg
yolks and
sugar
.
6.
Add
essence and
pineapple juice
and beat well.
7.
Remove
the beater. With a wooden spoon
mix
maida
to the
mixture
gently.
8. Beat
egg
whites separately till stiff.
9. Fold this to the cake
mixture
carefully and
pour
on arranged
pineapple
slices,
bake
at 180°C for half an hour or till it is baked.
10. After
baking
remove
in a
serving
dish upside down, arrange
walnut pieces
and
cherries
on top.
Method To Make Caramelize Sugar
1. Take
sugar
in a dry pan with few drops of lemon
juice
,
heat
in a high flame till it browns and melts completely.
2. Do not disturb in between.
3. When its golden brown in colour,
pour
equal amount of
water
,
stir
gently in reduced flame till the
sugar
is completely dissolved.
4. When the liquid becomes thick, like honey consistency,
remove
from fire and use as in the recipe.
5. This can be preserved in refrigerator for more than a year.
