Cauliflower Manchurian

Ingredients

• • Cauliflowers (cut into small florets) - 3 cups

Ingredients For The Cauliflower Marinade

• • Garlic paste - 1 teaspoon
• • Ginger paste - ½ teaspoon
• • Salt - as required
• • Crushed black pepper - ½ teaspoon
• • Corn flour - 1 teaspoon

Ingredients For The Sauce Mixture

• • Soya sauce - 2 tablespoons
• • Chilly sauce - 2 tablespoons
• • Tomato ketchup - 3 tablespoons
• • Sugar - 1 tablespoon
• • Vinegar - 1 teaspoon

Ingredients For The Batter

• • All purpose flour - ½ cup
• • Corn flour - ¼ cup
• • Salt - as required
• • Water - ¼ cup
• • Oil (for deep frying) - as required

Ingredients For The Manchurian Sauce

• • Oil - 2 tablespoons
• • Garlic paste - ½ tablespoon
• • Ginger paste - 1 tablespoon
• • Red chilly flakes - 1 tablespoon
• • Onions (finely chopped) - ½ cup
• • Spring onions (chopped) - 2 tablespoons

Ingredients For Garnishing

• • Coriander leaves (finely chopped) - 1 tablespoon
• • Spring onions - 1 tablespoon

Method To Prepare Cauliflower Florets

• 1. Firstly break the cauliflower in medium size florets.
• 2. Heat water with salt and boil it. Rinse the cauliflower florets and add them to the hot water.
• 3. Let them get blanched in the water for 5 minutes. Drain and keep aside.

Method To Make The Sauce Mixture

• 1. In a bowl mix together the ingredients for the sauce - soya sauce, chilly sauce, tomato ketchup, sugar and white vinegar. Keep aside.

Method To Deep-fry The Cauliflower

• 1. In a bowl mix together the ingredients for the batter - all purpose flour, corn flour, soy sauce and salt.
• 2. Add water and whisk to make a smooth batter without any lumps.
• 3. Dip each cauliflower floret in the batter.
• 4. Fry the batter coated cauliflower florets in hot oil.
• 5. Drain the fried cauliflower florets on a kitchen paper towel. Fry all the cauliflower florets this way in batches.

Method To Make The Cauliflower Manchurian

• 1. In the same pan with a little oil, add garlic paste, ginger paste, red chilly flakes, finely chopped onions. Saute for a half a minute.
• 2. Add the chopped spring onions. Increase the flame and stir fry till it is almost cooked.
• 3. Add the sauce mixture and stir.
• 4. Add the deep-fried cauliflower florets.
• 5. Stir fry for two to three minutes ensuring the sauce coats the cauliflower florets well.
• 6. Remove from the hob. Mix in the chopped spring onions greens or garnish with them while serving.
• 7. Serve the cauliflower manchurian as a snack or as a side dish with fried rice or noodles.
