Chicken Malai Kabab

Ingredients

Chicken leg
- 1 kg
info: full with thigh portion

Vinegar
- ¼ cup
•
Butter
- 3 tablespoons
•
Onion paste
- ½ cup
•
Garlic paste
- 3 teaspoons
•
Ginger paste
- 3 teaspoons
•
Khoyas (grated)
- 5 tablespoons
•
Cashew nut paste
- 5 teaspoons
•
Red chilly powder
- 2 teaspoons
•
Cornflours
- 1 tablespoon
•
Dahi/Yogurt
- 2 cups
•
Double cream
- 2 tablespoons
•
Choti elaichis/Green cardamom powder
- 2 teaspoons
•
Hara dhania/Green coriander (finely chopped)
- ½ cup
•
Salt
- as required
•
Oil (for basting)
- as required
Method
1.
Wash
clean and dry
chicken
pieces.
Make
deep slits on the surface.
2.
Melt
butter
in a pan,
fry
onion paste
until golden brown
3.
Mix
all the
ingredients
to
make
the
marinade
,
add
chicken
making
sure
4. That it gets well coated with the
marinade
.
5.
Cover
and leave aside for 5 to 7 hours.
6.
Cook
over a charcoal
grill
turning frequently, till
chicken
is done.
Keep
7.
Basting
with
oil
so that the
chicken
remains soft.
8. Sprinkle with chaat
masala
and
serve
.
