Sri Lankan Egg Curry

Ingredients

Eggs
- 6
•
Oil
- 2 tablespoons
•
Onions
- 2
•
Tomatoes
- 4
•
Aniseeds
- ½ teaspoon
•
Curry leaves
- 2 sprigs
Ingredients For Grinding Together
•
Coconut (fresh, grated)
- ½ cup
•
Garlic
- 5 flakes
•
Ginger
- 1 inch piece
•
Coriander leaves
- 1 bunch
•
Dhania powder
- 1 ½ teaspoons
•
Green chillies
- 4
•
Turmeric powder
- ½ teaspoon
•
Onions
- 2
•
Tomatoes
- 2
•
Salt
- as required
Method
1.
Break
eggs
and beat with
salt
,
pepper
and little garam
masala
powder
.
2.
Mix
little diced
onions
and
coriander leaves
.
3.
Pour
this into small cups and steam in a pressure cooker in a low flame till it sets.
Method To Make Gravy
1.
Cut
onions
and
tomatoes
finely.
2.
Heat
oil
season with
aniseed
and
curry leaves
,
fry
onions
till translucent
add
tomatoes
and
fry
well till it is soft and mashed well.
3.
Pour
the ground
mixture
and
fry
till good smell comes from it.
4.
Add
little sugar if desired.
5.
Pour
enough
water
and allow the gravy to
boil
for few minutes.
6. Take the steamed
egg
mixture
(Which is already set)
7. Put it in the
Curries
& Gravies,
boil
for few minutes in a low flame and
serve
with chopped
coriander leaves
and fresh lime.
