Safed Keema Kofta Curry

Ingredients For The Koftas
•
Keema
- 500 grams
info: mutton mince, leg portion, without fat
•
Ginger paste
- 1 teaspoon
•
Garlic paste
- 1 teaspoon
•
Jaiphals/Nutmeg powder
- ¼ teaspoon
•
Bari elaichis/Black cardamom powder
- ½ teaspoon
•
Ghee/Clarified butter
- 2 teaspoons
•
Salt
- as required
Ingredients For The Gravy
•
Ghee/Clarified butter
- 3 tablespoons
•
Onion (prepare: ground to a paste)
- 1
•
Dhania/Coriander powder
- 1 teaspoon
•
Jeera/Cumin powder
- 1 teaspoon
•
White pepper powder
- ½ teaspoon
•
Garam masala
- ½ teaspoon
•
Cream
- ½ cup
•
Maida/Plain flour
- 1 teaspoon
•
Dahi/Yogurt (whisked)
- 1 cup
•
Salt
- as required
•
Saffron (prepare: soaked in 1 teaspoon hot milk)
- a pinch
•
Badaams/Almonds (slivered, for garnishing)
- 1 tablespoon
Method
1.
Mix
keema
with remaining kofta
ingredients
(except
ghee
).
2.
Grind
to a very smooth
paste
.
Mix
in
ghee
and
grind
once again.
3. Rub a little
oil
or
ghee
on your hand and shape into round koftas.
4. For the gravy,
mix
together
cream
, milk,
dahi
and
maida
.
5.
Strain
through a muslin cloth and put aside.
6.
Fry
onion
paste
until translucent.
7.
Add
dhania
,
jeera
,
garam masala
,
white pepper powder
and
salt
.
8.
Mix
-in
cream
mixture
and bring to a
boil
stirring
continuously.
9.
Add
the koftas gently.
10.
Cover
and leave to
simmer
, gently shaking the pan from time to time, taking care to avoid
breaking
the koftas.
11. When koftas are firm and cooked through,
add
saffron
milk.
12. Garnish with
badaam
and
serve
hot with boiled rice.
