Ingredients

• • Ladies finger - ¼ kg
• • Onions (small, peeled) - ¼ cup
• • Green chillies - 3
• • Red chillies - 3
• • Garlic - 6 flakes
• • Tomatoes - 2
• • Tamarind - lemon size
• • Salt - as required
• • Oil (for frying) - as required
• • Coconut extract (thick) - 2 tablespoons

Ingredients For Seasoning

• • Mustard seeds - ¼ teaspoon
• • Black gram dal - ½ teaspoon
• • Fenugreek - ¼ teaspoon
• • Curry leaves - few

Method

• 1. Peel and slice onions, garlic lengthwise.
• 2. Chop tomatoes finely and ladies finger into 2 inch pieces.
• 3. Soak tamarind in rice washed water for ½ an hour and then take extract.
• 4. Heat oil, add seasonings, garlic, broken red chillies and slit green chillies.
• 5. Add sliced onions, fry till transparent and then add tomatoes.
• 6. Stir till tomatoes become soft.
• 7. Mix ladies finger pieces and fry for few more minutes.
• 8. Add tamarind extract and more water from washed rice. (This helps to remove the stickiness of ladies finger).
• 9. Add salt and cook till gravy becomes thick.
• 10. Mix coconut extract just before removing from fire.
• 11. Garnish with coriander leaves.

Note - Other Suggested Vegetables To Make This Sambar

• • Beans, Carrot, Potato, Raw mango, Drumsticks, Raw banana, Karamani etc. - Any one vegetable or combination of any two or three types can be used.
• • Cut lengthwise, cook separately and make as mentioned above. Increase chillies according to individual taste.
