Ingredients

Ladies finger
- ¼ kg
•
Onions (small, peeled)
- ¼ cup
•
Green chillies
- 3
•
Red chillies
- 3
•
Garlic
- 6 flakes
•
Tomatoes
- 2
•
Tamarind
- lemon size
•
Salt
- as required
•
Oil (for frying)
- as required
•
Coconut extract (thick)
- 2 tablespoons
Ingredients For Seasoning
•
Mustard seeds
- ¼ teaspoon
•
Black gram dal
- ½ teaspoon
•
Fenugreek
- ¼ teaspoon
•
Curry leaves
- few
Method
1.
Peel
and
slice
onions
,
garlic
lengthwise.
2.
Chop
tomatoes
finely and
ladies finger
into 2 inch pieces.
3.
Soak
tamarind
in rice washed
water
for ½ an hour and then take
extract
.
4.
Heat
oil
,
add
seasonings
,
garlic
, broken
red chillies
and slit
green chillies
.
5.
Add
sliced
onions
,
fry
till transparent and then
add
tomatoes
.
6.
Stir
till
tomatoes
become soft.
7.
Mix
ladies finger
pieces and
fry
for few more minutes.
8.
Add
tamarind
extract
and more
water
from washed rice. (This helps to
remove
the stickiness of
ladies finger
).
9.
Add
salt
and
cook
till gravy becomes thick.
10.
Mix
coconut extract
just before
removing
from fire.
11. Garnish with coriander
leaves
.
Note - Other Suggested Vegetables To Make This Sambar
• Beans, Carrot, Potato, Raw mango, Drumsticks, Raw banana, Karamani etc. - Any one
vegetable
or combination of any two or three types can be used.

Cut
lengthwise,
cook
separately and
make
as mentioned above. Increase
chillies
according to individual
taste
.
