Vegetables Stir Fry

Ingredients

Cabbage
- ¼ kg
•
Spring onions
- 6
•
Capsicums
- 5
•
Onion stems
- 1 bunch
•
Carrots
- 3
•
Celeries
- 1 bunch
•
Tomato ketchup
- 2 tablespoons
•
Capsico sauce
- 1 ½ teaspoons
•
Soya sauce
- 1 teaspoon
•
White pepper powder
- ½ teaspoon
•
Chilly powder
- ½ teaspoon
•
Ginger powder (dry)
- ¼ teaspoon
•
Garam masala
- ½ teaspoon
•
Salt
- as required
•
Caramelised sugar
- 1 teaspoon
•
Oil
- 2 tablespoons
Method
1.
Cut
all the
vegetables
into thin 1 inch long pieces.
2. Immerse sliced
carrot
in salted
boiling
water
for 2 minutes, and then
strain
.
3.
Heat
oil
,
add
onions
and
fry
till it turns transparent.
4.
Add
carrot
,
cabbage
and
capsicum
,
fry
over high flame.
5. When the
vegetables
become tender,
add
spring onion
stems and sliced
celery
.
6.
Fry
for a minute,
add
ketchup
,
sauces
, and
masala
powders.
7. Brown the
sugar
in a dry pan,
add
a little
water
.
8. When it becomes thick like honey,
remove
from fire and
add
to the
masala
.
9.
Mix
well and
remove
from fire.
10. This curry can be used for sandwiches and bun.
11. Makes excellent topping for pizzas and sandwiches.
