Vegetable Paratha

Ingredients

Potatoes

Carrots

Beetroot
- 1

Peas
- ¼ cup
•
Onion (chopped finely)
- 1

Green chillies (prepare: make into paste with salt)
- 6

Salt
- 1 ¼ teaspoons
•
Coriander leaves (cut)
- 1 tablespoon
•
Oil
- 2 tablespoons
Method
1. Pressure
cook
potatoes
along with grated
carrots
,
beetroot
and
peas
in other container.
2.
Peel
and
mash
potatoes
.
Crush
peas
.
3.
Heat
oil
and season with ¼ Teaspoon of cumin
seeds
4.
Fry
onions
for 2 minutes.
5. Squeeze out extra
water
from cooked
carrots
,
beetroot
, and
add
to
onions
.
6. Continue
frying
with mashed
potatoes
and crushed
peas
.
7.
Add
salt
,
chilly
paste
and lemon juice.
8.
Mix
well and
remove
from fire.
9. Garnish with
cut
coriander leaves
.
10. Stuff 1 ½ tablespoons of filling for each paratha.
