Vegetable Kurma

Ingredients

Carrots
- ½ cup
•
Potatoes
- 1 cup
•
Cauliflowers
- ½ cup
•
Beans
- ½ cup
•
Peas
- ½ cup
•
Salt
- as required
•
Garam masala powder
- 1 teaspoon
•
Oil
- 3 tablespoons
Ingredients For Masala
•
Garlic
- 5 flakes
•
Green chillies
- 8
•
Coconut scrapings
- 5 tablespoons
•
Ginger
- 1 inch piece
•
Onion
- 1
•
Coriander leaves
- 1 bunch
Method
1.
Fry
garlic
and
green chillies
with little
oil
.
Keep
aside.
2.
Fry
the
vegetables
in ghee.
3.
Add
the ground
masala
with enough
water
,
salt
,
garam masala
and sugar for
taste
.
4.
Keep
in pressure cooker and
cook
for 7 minutes after the vent has been put.
5. Garnish with
coriander leaves
and squeeze lime juice if desired.
6. Instead of
masala
powder
,
fry
Aniseeds, cardamom, cinnamon, bay
leaf
and cashew nuts.
7.
Pour
on top of the kurma,
mix
well and then
remove
from fire.
Serve
with ghee rice.
