Vegetable Jalfrezi

Ingredients

• • Peas - ½ cup
• • Carrot - 1
• • Beetroot - 1
• • Beans - ¼ cup
• • Potato - 1
• • Cabbage - ½
• • Salt - as required
• • Curd (fresh) - 2 cups
• • Oil - 2 tablespoons
• • Cardamoms - 3
• • Cinnamon - 3
• • Garlic (separated & peeled) - 2 flakes
• • Turmeric powder - ½ teaspoon
• • Green chillies - 4
• • Chilly powder - 1 teaspoon
• • Coconut extract - ½ cup
• • Coriander leaves - a little

Method

• 1. Wash and cut vegetables into desired size.
• 2. Cook with just enough water. (Pressure cook until one whistle directly in cooker. Strain water and use as required)
• 3. Heat oil in a frying pan, fry cardamom, cinnamon, garlic and cut chillies.
• 4. Add vegetables along with chilly powder, salt, coconut extract and curds.
• 5. Simmer for 10 minutes.
• 6. Garnish with cut coriander leaves and serve hot.

Variation

• • Fry green chillies and poppy seeds in little oil.
• • Grind it along with little coconut, onion, 1 tomato, few garlic flakes and little ginger.
• • Fry onions and then add ground paste.
• • When it smells good add cooked vegetable and salt. Cook until done.
