Vangi Bhath 3 (Brinjal Rice)

Ingredients

Rice (long variety)
- 1 cup
•
Brinjal (tender)
- ¼ kg
•
Green chillies
- 3
•
Onions (small)
- ½ cup
•
Tomatoes
- 4
•
Oil
- 3 tablespoons
•
Salt
- as required
•
Turmeric powder
- ½ teaspoon
•
Curry leaves
- few
Ingredients For Grinding Together

Red chillies
- 6
•
Cloves
- 2
•
Cinnamon
- 1 inch piece
•
Garlic
- 8 flakes
•
Ginger
- ½ inch piece
Ingredients For Seasoning
•
Mustard seeds
- ½ teaspoon
•
Black gram dal
- 1 teaspoon
•
Bengal gram dal
- 1 teaspoon
Method
1.
Cook
rice
and
spread
over a broad basin to cool.
2.
Dice
brinjals
into small pieces and
soak
in salted
water
till required.
3. Slit
green chillies
into two.
4.
Grind
the
masala
to a smooth
paste
.
5.
Cut
tomatoes
as finely as possible.
6.
Heat
oil
,
add
the
seasoning
with
curry leaves
.
7. Then
fry
green chillies
and small
onions
, for few minutes.
8.
Add
brinjals
,
tomatoes
, ground
masala
paste
,
salt
,
turmeric powder
and little
water
.
9. Close the pan with a lid and
cook
in medium flame till
brinjals
become tender and moisture is absorbed completely.
10.
Stir
in between to prevent charring.
11.
Add
cooked
rice
and
fry
for few minutes.
12.
Serve
hot.
