Tomato Pulao

Ingredients
•
Basmati rice
- 1 cup
•
Tomato pulp
- 1 cup
•
Water
- 1 cup
•
Green chillies
- 4
•
Red chilly powder
- ½ teaspoon
•
Onions (small)
- ¼ cup
•
Garlic
- 6 flakes
•
Peas (fresh)
- ¼ cup
•
Lemon
- 1
•
Salt
- as required
•
Ginger-garlic paste
- ½ teaspoon
•
Coriander leaves (cut finely)
- 1 tablespoon
•
Cashew nut paste
- 1 tablespoon
•
Cinnamon
- 1 inch piece
•
Cloves
- 3
•
Cardamoms
- 2
•
Bay leaf
- 1
•
Ghee
- as required
•
Sugar
- as required
Method
1.
Wash
and
soak
rice
for 10 minutes.
2.
Peel
onions
and
cut
green chillies
lengthwise.
3.
Grind
tomatoes and
strain
to
get
uniform
pulp
.
4.
Fry
rice
in half a Teaspoon of
ghee
till moisture is absorbed.
5.
Heat
oil
in a pressure pan and
fry
masala
spices
,
ginger-garlic paste
,
green chillies
and then
onions
.
6.
Add
cooked
peas
with
tomato pulp
and
water
.
7. When it starts
boiling
add
salt
,
chilly
powder
,
cashew nuts
paste
, little
sugar
and
rice
.
8.
Mix
well.
9.
Reduce
flame and pressure
cook
for 10 minutes.
10. If tomatoes are very sweet, squeeze
lemon
juice after
removing
the lid, garnish with
cut
coriander leaves
.
