Tomato Coriander Chutney

Ingredients
•
Tomato (ripe)
- ½ kg
•
Coriander leaf
- 2 big bunches
•
Garlic (peeled)
- 8 flakes
•
Ginger
- 1 ½ inch pieces
•
Red chillies
- 10
•
Coconut (grated, fresh)
- ¼ cup
•
Salt
- as required
•
Oil (for frying)
- as required
Method
1.
Remove
thick stems from
coriander
,
wash
and
chop
.
2.
Peel
garlic
,
ginger
and
cut
into convenient pieces.
3.
Wash
and
dice
tomatoes
to medium sized square.
4.
Heat
little
oil
in a '
frying
pan',
add
red chillies
,
garlic
, allow to tum golden and then
mix
tomatoes
.
5.
Stir
fry
until moisture evaporates.
6.
Add
coriander
,
coconut
and
fry
for another few minutes.
7. Allow to cool,
add
ginger
,
salt
and
grind
to coarse chutney consistency.
8.
Serve
with Idli, dosa, chapati or puri varieties.
