Tomato Coconut Chutney

Ingredients

• • Red chillies - 6
• • Tomatoes - 2
• • Onion (big) - 1
• • Coconut - ½
• • Salt - as required
• • Oil (for seasoning) - as required

Ingredients For Seasoning

• • Mustard - ½ teaspoon
• • Urad dal - 1 ½ teaspoons
• • Asafoetidas - a little

Method

• 1. Peel and dice onion, and tomatoes.
• 2. Grate coconut.
• 3. Heat oil in a frying pan add mustard, urad dal and then asafoetida, red chillies.
• 4. Add diced onion and fry well.
• 5. Mix diced tomatoes and fry until moisture evaporates.
• 6. Add coconut at the end and fry for 1 or 2 minutes.
• 7. Allow to cool thoroughly, add salt and grind to coarse chutney consistency and serve.
