Stuffed Ridge Gourd Curry

Ingredients
•
Ridge gourd
- ½ kg
•
Oil (for frying)
- as required
•
Mustard seeds
- ¼ teaspoon
Ingredients For Grinding Together
•
Coconut (grated, fresh)
- ½ cup
•
Grams/Chutney dal (roasted)
- 1 ½ tablespoons
•
Green chillies
- 10
•
Coriander leaves
- 1 bunch
•
Curry leaves (tender)
- a little
•
Ridge gourd skins (fried)
- ¼ cup
•
Ginger
- ½ inch piece
•
Salt
- as required
Method
1.
Wash
and
scrape
ridge gourd skin
and
keep
separately.
2. Check the
vegetable
for bitterness and
cut
into 2 inch thick round pieces.
3. Slit into four half way through.
4.
Fry
ridge gourd skin
in
oil
till it becomes dark in colour.
5.
Grind
it along with other mentioned
ingredients
.
6. Stuff it in
ridge gourd
7.
Heat
oil
in a big
frying
pan (use more
oil
) and arrange stuffed pieces in that.
8.
Mix
water
with rest of the
masala
and
pour
on top.
9.
Cover
with lid and
cook
in medium flame,
stirring
in between till
gourd
is cooked well.
10. Allow to cool and stuff back oozed out
masala
into
vegetable
and then
serve
.
Note
• This can be served as a gravy or as a dry
curry
with plain rice.
