Stuffed Brinjal

Ingredients
•
Green brinjal (tender)
- ½ kg
•
Onions (finely cut)
- 2 tablespoons
•
Oil (for frying)
- as required
Ingredients For Seasoning
•
Mustard seeds
- ½ teaspoon
•
Black gram dal
- 1 teaspoon
•
Bengal gram dal
- 1 teaspoon
Ingredients For Grinding Together
•
Coconut (grated, fresh)
- ¼ cup
•
Red chillies
- 10
•
Garlic
- 5 flakes
•
Coriander seeds
- 1 tablespoon
•
Grams/Chutney dal (roasted)
- 1 ½ tablespoons
•
Onion (big)
- 1
•
Tomatoes
- 3
•
Salt
- as required
Method
1. Select and
cut
brinjals
.
2.
Grind
the
masala
without
adding
water
(or with minimum possible
water
).
3.
Add
finely
cut
onions
and fried
seasonings
(
mustard
,
black gram
and
bengal gram
) with a table spoon of
oil
to the ground
masala
.
4. Stuff inside
brinjals
.
5. Arrange in deep
frying
pan (with 2 to 3 Tablespoon of
oil
) with the remaining
masala
on top along with ½ cup
water
.
6.
Reduce
flame and
cook
till moisture is absorbed and
brinjal
becomes soft.
7. Allow to cool, stuff the
masala
back into the
brinjal
(after
cooking
) and then
serve
.
