Stuffed Brinjal

Ingredients

• • Green brinjal (tender) - ½ kg
• • Onions (finely cut) - 2 tablespoons
• • Oil (for frying) - as required

Ingredients For Seasoning

• • Mustard seeds - ½ teaspoon
• • Black gram dal - 1 teaspoon
• • Bengal gram dal - 1 teaspoon

Ingredients For Grinding Together

• • Coconut (grated, fresh) - ¼ cup
• • Red chillies - 10
• • Garlic - 5 flakes
• • Coriander seeds - 1 tablespoon
• • Grams/Chutney dal (roasted) - 1 ½ tablespoons
• • Onion (big) - 1
• • Tomatoes - 3
• • Salt - as required

Method

• 1. Select and cut brinjals.
• 2. Grind the masala without adding water (or with minimum possible water).
• 3. Add finely cut onions and fried seasonings (mustard, black gram and bengal gram) with a table spoon of oil to the ground masala.
• 4. Stuff inside brinjals.
• 5. Arrange in deep frying pan (with 2 to 3 Tablespoon of oil) with the remaining masala on top along with ½ cup water.
• 6. Reduce flame and cook till moisture is absorbed and brinjal becomes soft.
• 7. Allow to cool, stuff the masala back into the brinjal (after cooking) and then serve.
