Spinach Rice

Ingredients
•
Rice
- 1 cup
•
Spinaches/Palak
- 2 bunches
•
Green chillies
- 3
•
Onions (small)
- ½ cup
•
Peas
- ½ cup
•
Tomatoes
- 3
•
Coconut (grated, fresh)
- 2 tablespoons
•
Cashew nuts
- 1 ½ tablespoons
•
Red chillies
- 7
•
Coriander seeds
- 2 teaspoons
•
Salt
- as required
•
Oil
- 3 tablespoons
•
Bay leaf
- 1
•
Cinnamon
- 1 inch piece
•
Cloves
- 2
Method
1.
Cook
rice
and allow it to cool.
2. Separate the grains.
3.
Cook
peas
till soft.
4. Slit
green chillies
into two.
5.
Peel
onions
.
6.
Cut
tomatoes
as finely as possible.
7.
Wash
and
chop
spinach
.
8.
Heat
a Teaspoon of
oil
and
fry
spinach
in a low flame with little
water
sprinkled.
9. When it is cooked and moisture is evaporated,
remove
from fire.
10. Allow it to cool.
11.
Fry
red chillies
and
coriander seeds
in little
oil
.
12.
Grind
it along with
coconut
,
cashew nuts
and cooked
spinach
.
13. Use very little
water
for
grinding
.
14.
Heat
rest of the
oil
in a broad
frying
pan and
fry
bay leaf
,
cinnamon
and
cloves
.
15.
Add
green chillies
and small
onion
.
16.
Fry
for two minutes and
add
tomatoes
.
17. When moisture is absorbed completely
add
ground
masala
and
fry
till good smell comes.
18.
Mix
rice
and
salt
to this.
19.
Fry
in high flame till
rice
becomes hot.
20.
Remove
from fire.
21. Garnish with fried
cashew nuts
and
serve
hot with raita.
