Spiced Yogurt Chicken

Ingredients
•
Chicken (cut into 8 pieces)
- 800 grams
•
Yogurt/Dahi
- 1 ½ cups
•
Red chillies (dried)
- 6
•
Garlic
- 10 flakes
•
Ginger (prepare: ground to a paste with garlic)
- 2 inch pieces
•
Kala namaks/Black salt
- ½ teaspoon
•
Pepper powder
- ½ teaspoon
•
Chat masala
- 1 teaspoon
•
Oil
- 2 tablespoons
•
Malai/Cream
- 2 tablespoons
•
Garam masala
- ½ teaspoon
•
Salt
- as required
•
Green chillies (slit, for garnishing)
- a little
•
Coriander leaves (for garnishing)
- a little
Method
1.
Break
the
red chillies
into 2 or 3 pieces and
deseed
them.
2. Discard the
seeds
to lessen the sharpness of the
chillies
.
3. Beat the
curd
with
ginger
-
garlic
paste
,
salt
,
black salt
,
pepper
,
garam masala
,
chat masala
& broken
red chillies
.
Keep
aside.
4.
Heat
oil
in a pressure cooker.
Add
only the
chicken
pieces to the hot
oil
, leaving the
curd
behind.
5.
Cook
on high flame till the moisture evaporates and the pieces are dry.
6.
Add
the
curd
and ½ cup
water
. Close the pressure cooker and pressure
cook
to give 2 whistles.
7. Switch off the flame immediately after the 2nd whistle. Drop the pressure by putting
cold water
on the lid of the cooker.
8. Open the lid and dry the excess moisture.
Add
the
malai
or
cream
and
cook
till the
masala
coats the pieces.
9. Garnish with slit
green chillies
and
coriander
.
