Spanish Eggs

Onion (finely chopped)

Ginger (finely chopped)
- ¼ inch piece

Green chillies (finely chopped)

Whole eggs

Egg whites
- 2

Salt
- as required

Red chilly powder
- as required

Pepper
- as required

Coriander leaves
- as required
Method
1. In a non stick pan
heat
together
onion
,
tomato
,
green chilly
,
ginger
, ¼ Teaspoon
salt
& ¼ Teaspoon
red chilly powder
.
2.
Cook
till
onion
&
tomato
are soft.
3.
Pour
in a small
baking
dish &
make
an even
layer
.
4. Beat
eggs
lightly with ½ Teaspoon
salt
& ½ Teaspoon
pepper
.
5.
Pour
over the
onion
and
tomato
layer
.
6. Sprinkle some fresh chopped
coriander leaves
&
red chilly powder
for decoration.
7.
Bake
in a preheated oven for 15-20 minutes at 180°C or till
eggs
are set.
