Sorakaya Bajji

Ingredients
•
Sorakaya/Bottle gourd (peeled and cubed)
- 1
•
Onion (chopped)
- 1
•
Tomato (cut finely)
- 1
•
Onions (finely cut)
- ¼ cup
•
Turmeric powder
- 2 pinches
•
Green chillies
- 6
•
Tamarind paste
- 1 ½ tablespoons
•
Jeera
- 1 tablespoon
•
Salt
- as required
•
Oil (for seasoning and frying)
- as required
•
Curry leaves
- 1 sprig
Ingredients For Seasoning
•
Mustard seeds
- 1 teaspoon
•
Methi seeds
- 1 teaspoon
•
Urad dal
- 1 teaspoon
•
Bengal gram dal
- 1 teaspoon
Ingredients For Garnishing
•
Coriander leaf
- 1 small bunch
Method
1.
Scrape
outer skin from
bottle gourd
and
cut
into small pieces.
2.
Add
cut
chillies
,
onion
,
tamarind
extract,
salt
,
chilly
powder
and pressure
cook
for 10 minutes.
3. Once fully cooked
add
tamarind paste
and roughly
mash
tomato
and
sorakaya
mixture
. Do not
make
it into fine
paste
.
4. In a pan
heat
the remaining
oil
and
add
mustard seeds
,
jeera
,
methi seeds
,
curry leaves
and
onions
and let them
fry
till
onions
get
golden brown color.
5. Now
add
the
onion
mixture
to the mashed
sorakaya
and
tomato
mixture
.
6. Adjust
salt
and
tamarind paste
.
7.
Add
seasonings
and garnish with
curry leaves
before
removing
from fire.
