Shahi Paneer

Ingredients For The Paste
•
Onion - (roughly chopped)
- 1

Cashew nuts
- 2 tablespoons
•
Almonds
- 1 tablespoon
•
Ginger (chopped)
- 1 teaspoon
•
Garlic (chopped)
- 1 teaspoon
Ingredients For Shahi Paneer
•
Butter
- 3 tablespoons
•
Garam masala powder
- ¼ teaspoon
•
Coriander powder
- 1 teaspoon
•
Red chilly powder
- ½ teaspoon
•
Turmeric powder
- ¼ teaspoon
•
Yogurt
- ½ cup
•
Onions and nuts stock (from boiling onions and nuts)
- 1 ½ cups
•
Salt
- as required
•
Sugar
- as required
•
Cardamom powder
- ¼ teaspoon
•
Saffron
- a pinch
•
Paneer
- 250 grams
•
Cream
- 2 tablespoons
•
Kewra essence
- 1 drop
•
Coriander leaves
- 1 tablespoon
Method
1.
Boil
onions,
cashew nut
,
almonds
,
ginger
and
garlic
in
water
until the onions become soft.
2.
Strain
the
stock
water
and
keep
aside.
3.
Grind
cooked
ingredients
into a smooth
paste
.
4.
Heat
butter
.
Add
garam masala
and saute until an aroma is released.
5.
Add
the
ground paste
and saute until
oil
starts separating from the
paste
.
6.
Add
coriander powder
,
red chilly powder
and
turmeric powder
.
7.
Add
yogurt
, onion & nuts
stock
water
,
salt
and
sugar
.
8.
Simmer
on low
heat
until the gravy thickens slightly.
9.
Add
cardamom powder
and
saffron
.
10.
Add
the cubed
paneer
and
cream
.
11.
Simmer
for a few minutes till the
paneer
is cooked.
12.
Add
the
kewra essence
.
13. Garnish with
coriander leaves
.
