Ridge Gourd Gotsu

Ingredients

Ridge gourd
- ¼ kg
•
Green chillies
- 4
•
Onions (finely cut)
- ½ cup
•
Tamarind (soaked & extracted)
- small lime size
•
Salt
- as required
•
Jaggery (grated)
- as required
•
Turmeric powder
- ¼ teaspoon
•
Tomatoes (finely cut)
- ¼ cup
Ingredients For Seasoning
•
Mustard seeds
- ¼ teaspoon
•
Urad dal
- 1 teaspoon
•
Bengal gram dal
- 1 teaspoon
•
Asafoetida powder
- 2 pinches
•
Curry leaves
- 1 sprig
Method
1. Scrap
Ridge gourd
and
cut
into very fine pieces and
keep
immersed in
water
until required.
2.
Heat
oil
in a '
frying
pan' and
add
chopped
green chillies
,
ridge gourd
.
3.
Stir
fry
until
Ridge gourd
turns into dark colour.
4.
Pour
tamarind
extract
add
turmeric powder
and
boil
until thick.
5. Switch off the stove and
mash
cooked
ridge gourd
properly using a masher.
6.
Heat
oil
,
add
seasonings
and then
fry
onions
until golden.
7.
Add
tomatoes
,
stir
until moisture evaporates and then
add
mashed
Ridge gourd
,
salt
, sugar along with little
water
.
8.
Cook
until thick and
serve
.
