Ridge Gourd Dry Curry

Ingredients
•
Ridge gourd
- ½ kg
•
Oil/Ghee (for frying)
- as required
•
Coriander seeds/Dhania
- 2 teaspoons
•
Salt
- as required
Ingredients For Pounding Coarsely
•
Coconut (grated, fresh)
- 2 tablespoons
•
Green chillies
- 3
•
Red chilly powder
- ¼ teaspoon
Method
1.
Scrape
outer skin from
gourd
, check for bitterness and then
chop
into 1 inch cubes.
2.
Heat
½ Teaspoon of
ghee
and
fry
dhania
till good smell comes and then
powder
.
3.
Heat
rest of the
ghee
and
oil
in a deep pan and
fry
gourd
pieces till half cooked.
4.
Add
coriander
powder
and continue
frying
till
gourd
is cooked three fourth.
5.
Add
pound
mixture
of
coconut
and
fry
till
gourd
becomes soft and moisture is absorbed completely.
6. Sprinkle
salt
,
mix
well and
remove
from fire.
7.
Serve
as a dry curry with rice.
