Rice Omelette

Rice (cooked)
- 5 tablespoons

Sugar
- 2 tablespoons
•
Salt
- as required
•
Nutmegs
- a pinch
•
Eggs
- 4
•
Pepper
- a pinch
•
Butter
- as required
Method
1. For
vegetable
filling -
Fry
diced
vegetables
in
butter
. Season with
salt
and
pepper
.
2.
Mix
rice
with
sugar
add
a tiny
pinch
of
salt
,
nutmeg
and dash of
water
.
3. Separate
egg
yolks from white.
4.
Mix
yolks into
rice
.
5. Whip whites until stiff and fold into the
rice
.
6.
Melt
butter
and
fry
an omelette from
mixture
.
7. Fill it with
vegetable
mixture
and
serve
at once.
