Rice Koftas

Ingredients For The Koftas
•
Shaft grained rice
- 1 cup
•
Bread crumbs
- 2 tablespoons
•
Ginger (finely chopped)
- 1 teaspoon
•
Garam masala
- ½ teaspoon
•
Green chilly (finely chopped)
- 1
•
Nutrela nutri soya keemas
- 3 tablespoons
•
Onion (finely chopped)
- ½
•
Chilly powder
- ¼ teaspoon
•
Hara dhania/Green coriander (finely chopped)
- 1 tablespoon
•
Oil (for deep frying)
- as required
Ingredients For The Gravy
•
Oil
- 2 tablespoons
•
Onion (grated)
- 1
•
Garlic paste
- ½ teaspoon
•
Tomato puree
- ½ cup
•
Maida/Plain flour
- ½ teaspoon
•
Dahi/Yogurt (whisked)
- ½ cup
•
Dhania/Coriander powder
- ½ teaspoon
•
Chilly powder
- ½ teaspoon
•
Green chillies (cut into strips lengthwise)
- 2
•
Hara dhania/Green coriander (for garnishing)
- as required
Method
1.
Boil
the
rice
in saline
water
, until very soft.
Drain
and leave in the sieve for 10 minutes so that no
water
remains.
2. While
rice
is
boiling
,
soak
Nutri
keema
in some
hot water
for 15 minutes,
drain
and leave in sieve for 10 minutes.
3.
Mash
the
rice
with
dahi
.
Mix
-in
bread crumbs
,
ginger
,
garlic
,
garam masala
and
green chillies
. Set aside.
4. To the Nutrels
add
onion
,
chilly powder
,
dhania
and a little
salt
.
Mix
well.
5. Rub little
oil
on your hands and divide both mixtures into equal parts.
6. Take little
rice
mixture
into your hand and shape into a ball.
7.
Make
a depression in the centre, fill with a tiny portion of Nutri
mixture
.
8. Close the
rice
mixture
around the filling.
9. Deep
fry
the koftas in hot
oil
until golden.
10. For the gravy,
fry
onion
until golden,
add
garlic paste
and
fry
for a minute,
add
tomato puree
and
fry
until the
oil
separates.
11.
Add
maida
,
dahi
,
chilly powder
and
dhania
powder
.
12. Bring to a
boil
,
stirring
continuously.
13.
Add
koftas,
green chillies
and
garam masala
, leave to
simmer
for 10 minutes.
14.
Serve
hot garnished with
hara dhania
.
