Rice Flakes Upma

Ingredients
•
Rice flakes (aval/poha)
- 2 cups
•
Onions
- 2
•
Green chillies
- 10
•
Turmeric powder
- ½ teaspoon
•
Lemon
- 1
•
Powder salt
- 1 ½ teaspoons
•
Coconut (grated)
- 2 tablespoons
(optional)
•
Coriander leaves (chopped)
- 1 tablespoon
•
Oil
- 6 tablespoons
•
Peas (cooked)
- ¼ cup
Ingredients For Tampering
•
Mustard seeds
- ½ teaspoon
•
Black gram dal
- ½ teaspoon
•
Bengal gram dal
- ½ teaspoon
•
Curry leaves
- 1 sprig
Method
1. If thick
rice flakes
are used,
soak
it in just enough
water
for two hours. If thin
rice flakes
are used,
wash
well, squeeze and do immediately.
2.
Chop
onions
into small pieces and
chillies
lengthwise.
3.
Heat
oil
in deep curved pan,
add
seasonings
,
green chillies
and then
onion
.
4. Saute till
onions
change its colour.
5.
Add
cooked
peas
, soaked
rice flakes
(which is separated well with hands) with
salt
and
turmeric powder
.
6.
Stir
constantly in high flame till raw smell goes.
7. Squeeze
lemon
and
serve
hot garnished with grated
coconut
.
Variations - Tamarind Aval
•
Reduce
green chillies
, omit
lemon
but
soak
rice flakes
in thin tamarind extract along with little sugar and red
chilly
powder
(or rasam
powder
)
• Pound
rice flakes
coarsely and
soak
in tamarind extract.
• Do not
add
onion
.
•
Add
few red
chillies
while
frying
instead of
chilly
powder
.
•
Add
cooked crumbled potatoes or sprouted green
gram
with
greens
(keerai) and do the recipe.
• Cooked channa can be used instead of
peas
.
• Squeeze
lemon
and
serve
along with channa sundal or
peas
sundal.
