Phirni

Ingredients

• • Milk - 1 liter
• • Rice flour - 1 ½ tablespoons
• • Sugar - 1 ¼ cups
• • Cardamom powder - ½ teaspoon
• • Cashew nuts - ½ tablespoon
• • Pisthas - ½ tablespoon

Method

• 1. Mix rice flour with 1 cup cold milk without forming any lumps.
• 2. Heat rest of the milk in a heavy vessel.
• 3. When it starts to boil, add rice flour paste and cook stirring constantly, till it becomes thick.
• 4. Add sugar and switch off the stove.
• 5. Stir for two minutes till sugar dissolves completely.
• 6. Mix cardamom powder and chill in refrigerator.
• 7. Pour in small individual cups and serve with fried nuts on top.
