Ingredients
•
Yellow pumpkins/White pumpkins (chopped into 1½ inch pieces)
- 2 cups
•
Black eyed peas
- ½ cup
•
Green chillies (slit lengthwise)
- 2
•
Coconut (grated, fresh)
- 1 cup
•
Curry leaves
- a little
•
Coconut oil
- 1 tablespoon
•
Salt
- as required
Method
1.
Wash
and
soak
black eyed peas
for 1 to 2 hours.
2. Pressure
cook
with enough
water
and little
salt
.
3.
Strain
the
water
/stock and
keep
aside the cooked
black eyed peas
.
4. Take care the
black eyed peas
shouldn’t be overcooked to mushy. It should retain its shape.
5.
Add
water
to
coconut
and
grind
in mixie.
6.
Strain
and squeeze to
get
first
coconut
extract.
7. Do it twice more to
get
second and third extract.
8.
Boil
vegetable
in third extract till it is cooked well.
9.
Add
green chillies
, second extract,
salt
and
cook
again for few minutes.
10.
Add
cooked
black eyed peas
and first thick extract, allow it to come to
boil
and
remove
from fire immediately.
11.
Add
curry leaves
, raw
coconut oil
and close with lid.
