Mutton Stroganoff

Ingredients
•
Boneless mutton (leg portion, cut into thin strips)
- 1 kg
•
Onions (medium, chopped finely)
- 2
•
Butter
- 4 tablespoons
•
Maida/Plain flour
- 3 tablespoons
•
Tomato puree
- 2 tablespoons
•
Single cream
- 2 cups
•
Salt
- as required
•
Black pepper powder
- 1 teaspoon
•
Button mushroom
- 200 grams
•
Oil
- 1 tablespoon
•
Brandy
- 2 tablespoons
•
Tabasco sauce
- a little
•
Parsley/Coriander leaves (fresh, for garnishing)
- a few
Method
1.
Melt
butter
in a heavy bottomed pan and
fry
the chopped
onions
until golden brown.
2.
Add
the
mutton
strips &
cook
on high flame to 'seal' the
meat
.
3.
Cook
until browned and then
add
the
flour
,
salt
&
pepper
.
4.
Add
1 cups
water
&
cook
, covered over medium
heat
until
mutton
is tender.
5. In a
frying
pan, saute the
mushrooms
in 1 Tablespoon
oil
for 2-3 minutes &
add
to the
mutton
.
6.
Add
the
tomato puree
,
brandy
and tabasco.
7.
Add
the
cream
,
heat
thoroughly.
8.
Remove
from fire & garnish with
parsley
and
serve
with freshly boiled flat noodles.
