Moong Sprouts Kurma

Ingredients

• • Sprouted green grams - 3 cups
• • Onions (small, peeled) - 12
• • Garlic - 7 flakes
• • Tomatoes - 2
• • Tamarind - lime size
• • Coconut (grated) - 3 tablespoons
• • Salt - as required
• • Jaggery - as required

Ingredients For Frying In The Oil

• • Red chillies - 6
• • Dhania - 1 tablespoon
• • Bengal gram dhals - 1 tablespoon
• • Poppy seeds (dry roast separately) - 1 teaspoon

Method

• 1. Steam cook sprouts for 3 minutes in a pressure cooker.
• 2. Cut tomatoes finely.
• 3. Soak tamarind in little water and take thick extract.
• 4. Dry grind roasted poppy and fried spices along with coconut.
• 5. Add water at the end and grind to smooth paste.
• 6. Heat little oil and fry garlic, small onion till golden.
• 7. Add chopped tomatoes and stir till moisture is absorbed.
• 8. Mix ground paste, salt, jaggery and keep stirring till good aroma comes.
• 9. Pour tamarind extract and steam cooked sprouts.
• 10. Cook till gravy becomes thick.
• 11. This kurma can be served with chapatis or Rawa Idlis.
