Mixed Vegetable Curry in Green Gravy

Ingredients

• • Carrots - ½ cup
• • Beans - ½ cup
• • Potatoes - 1 cup
• • Chow-chows - ½ cup
• • Peas - ½ cup
• • Onions (cut into thin long slices) - 5
• • Tomatoes - 4
• • Salt - as required
• • Oil - 2 ½ tablespoons
• • Jeera - 1 teaspoon

Ingredients For Grinding Together

• • Coconut (grated) - 1 cup
• • Poppy seeds - 1 tablespoon
• • Garlic - 10 flakes
• • Green chillies - 10
• • Ginger - ½ inch piece
• • Grams (roasted) - 1 tablespoon
• • Cloves - 3
• • Cinnamon - 1 inch piece
• • Mint leaves - 2 bunches

Method

• 1. Dice all the vegetables and cook in pressure cooker.
• 2. Slice onions and chop tomatoes finely.
• 3. Grind the masala to smooth paste.
• 4. Heat oil in a frying pan, season with jeera, fry onions till golden brown.
• 5. Add tomatoes and fry till it becomes soft.
• 6. Mix in ground masala and add boiled vegetables with just enough water and boil till gravy becomes thick.
