Mixed Vegetable Curry in Green Gravy

Ingredients

Carrots
- ½ cup

Beans
- ½ cup

Potatoes
- 1 cup
•
Chow-chows
- ½ cup
•
Peas
- ½ cup
•
Onions (cut into thin long slices)
- 5
•
Tomatoes
- 4
•
Salt
- as required
•
Oil
- 2 ½ tablespoons
•
Jeera
- 1 teaspoon
Ingredients For Grinding Together
•
Coconut (grated)
- 1 cup
•
Poppy seeds
- 1 tablespoon
•
Garlic
- 10 flakes
•
Green chillies
- 10
•
Ginger
- ½ inch piece
•
Grams (roasted)
- 1 tablespoon
•
Cloves
- 3
•
Cinnamon
- 1 inch piece
•
Mint leaves
- 2 bunches
Method
1.
Dice
all the
vegetables
and
cook
in pressure cooker.
2.
Slice
onions
and
chop
tomatoes
finely.
3.
Grind
the
masala
to smooth
paste
.
4.
Heat
oil
in a
frying
pan, season with
jeera
,
fry
onions
till golden brown.
5.
Add
tomatoes
and
fry
till it becomes soft.
6.
Mix
in ground
masala
and
add
boiled
vegetables
with just enough
water
and
boil
till gravy becomes thick.
