Mixed Vegetable Chutney

Ingredients

Onions (finely cut)
- ½ cup

Tomatoes (finely cut)
- ¾ cup
•
Chow-chows (chopped)
- ½ cup
•
Carrots (chopped)
- ½ cup
•
Knol-khols (chopped)
- ½ cup
•
Salt
- as required
•
Coconut (grated, fresh)
- 2 tablespoons
•
Oil (for frying)
- as required
•
Coriander (chopped)
- a little
•
Curry leaves
- a little
Ingredients For Roasting
•
Red chillies
- 8
•
Bengal gram dal
- 3 tablespoons
Ingredients For Seasoning
•
Mustard seeds
- ¼ teaspoon
•
Asafoetida powder
- 2 pinches
Method
1.
Heat
½ Teaspoon of
oil
in a '
frying
pan' and
roast
chillies
,
bengal gram dal
until crisp, golden transfer to a plate.
2. In the same '
frying
pan'
heat
little
oil
and
fry
all the
vegetables
together (
chow-chow
,
carrot
,
knol-khol
) until raw flavour is lost.
3.
Fry
onion
,
tomatoes
separately in little
oil
.
4.
Powder
roasted
ingredients
along with
salt
in the mixie.
5.
Add
all fried
vegetables
,
coconut
,
coriander
,
curry leaves
and
grind
to coarse chutney consistency.
6. Season
mustard
,
asafoetida
in little hot
oil
and
mix
with chutney.
