Methi Kofta Curry

Ingredients For Making Koftas
•
Fenugreek leaves
- 2 bunches
•
Sour thick curd
- ¾ cup
•
Turmeric powder
- ¼ teaspoon
•
Chilly powder
- ½ teaspoon
•
Garam masala powder
- ½ teaspoon
•
Salt
- as required
•
Bengal gram flour
- 1 cup
•
Ajwain
- ¼ teaspoon
•
Oil (for deep frying)
- as required
•
Cream (fresh, for topping)
- 2 tablespoons
•
Finely grated cheese
- 1 tablespoon
•
Raisins
- 1 tablespoon
•
Cashew nuts
- 1 tablespoon
•
Coriander leaves (chopped)
- as required
Ingredients For Making Curry (grind Together)
•
Onions
- 2
•
Tomatoes
- 3
•
Ginger
- 1 inch piece
•
Green chillies
- 2
•
Sugar
- 1 teaspoon
•
Salt
- as required
•
Red chilly powder
- ¾ teaspoon
•
Garam masala powder
- ½ teaspoon
•
Dhania powder
- 1 tablespoon
•
Turmeric powder
- ¼ teaspoon
Method
1.
Mix
salt
,
turmeric powder
,
chilly powder
,
bengal gram flour
in thick
curds
to a
paste
.
2.
Heat
little
oil
,
add
ajwain
and then chopped
fenugreek
(methi)
leaves
.
3.
Fry
for a minute and then
pour
curds
mixture
in it.
4.
Stir
constantly in reduced flame till it forms a thick mass.
5. Allow to cool,
add
garam masala powder
and
prepare
small balls.
6. Deep
fry
in hot
oil
till the koftas turn golden brown.
7.
Keep
aside.
Method To Prepare Curry
1.
Heat
oil
in a
frying
pan and
fry
ground paste
till
oil
separates from the
masala
.
2.
Add
more
oil
if necessary while
frying
.
3. When curry changes its colour and becomes thick,
pour
just enough
water
and
boil
for few minutes.
4. Arrange koftas on a
serving
dish.
Pour
hot gravy on top. Decorate with chopped
coriander leaves
and
finely grated cheese
.
5. Dot with fresh
cream
and
serve
with parathas.
