Malabhar Yam Fry

Ingredients
•
Malabhar yam
- ¼ kg
•
Oil (for deep frying)
- as required
•
Tamarind
- lime size
•
Turmeric powder
- ¼ teaspoon
•
Salt
- as required
•
Red chilly powder
- as required
Method
1.
Scrape
outer skin and
cut
yam
into 2 inch squares of ¼ inch thickness.
2.
Cook
in enough
water
to which
salt
,
turmeric powder
and
tamarind
is added.
3. When it is half cooked,
drain
water
completely.
4. Dry over a towel and then deep
fry
till little dark brown (or crisp).
5. Sprinkle
salt
,
chilly
powder
and
serve
immediately.
Note - Another Method
•
Slice
yam
into more broader and thin pieces (3 to 4 inch width and ¼ inch thickness).
Boil
as above.
•
Grind
few flakes of garlic, small onion, black
pepper
, cumin
seeds
with
salt
to
coarse paste
.
•
Add
aniseed at the end and
crush
once or twice.
•
Mix
this
paste
with maida or com flour and smear over cooked
yam
pieces and allow to
marinate
for 1 hour.
•
Heat
a tawa or flat pan and arrange slices on that.
•
Add
oil
and toast both sides till crisp.
Serve
immediately.
