Maize Roti

Ingredients
•
Maida
- 1 cup
•
Maize flour
- 1 cup
•
Salt
- 1 teaspoon
•
Warm water (for mixing the dough)
- as required
•
Oil (for frying)
- as required
•
Cooking soda
- 2 pinches
Method
1.
Mix
maida
and
maize flour
together with
salt
and
soda
.
2. Using
warm water
knead to smooth dough.
3. Apply little
oil
to hands and knead well several times.
4.
Make
balls and
roll
out into thin rotis.
5.
Fry
on a hot 'tawa' both sides.
6. Apply little
oil
and
serve
hot.
Variation - Maize Methi Roti
•
Add
cut
methi
leaves
with green chilly
paste
to the dough while kneading.
Variation - Cauliflower Methi Roti
•
Cook
finely
cut
cauliflower and methi
leaves
.
•
Mash
well and
mix
to the dough with
salt
and red chilly
powder
.
•
Make
thick parathas and
fry
both sides with
oil
.
Note
• As
maize flour
doesn't have glutening effect, it cannot be used to
make
rotis.
• Only when it is used with
maida
, or wheat
flour
and rice
flour
, rotis come out well.
