Lime Sauced Fish With Cucumbers

Ingredients
•
Capsicum (cut into long strips)
- 1
•
Fish (cut into 1 ½ inch - 2 inch pieces)
- 250 grams
•
Lemon juice
- 2 tablespoons
•
Honey
- 2 teaspoons
•
White wine
- ¼ cup
(optional)
•
Water
- ¼ cup
•
Ginger/Saunth (dry, grounded)
- ½ teaspoon
•
Pepper
- ¾ teaspoon
•
Salt
- ½ teaspoon
•
Cornflours
- 2 teaspoons
•
Oil
- 1 teaspoon
•
Cucumbers
- 2
info: each 4 inch long - deseeded & cut into 2 inch long strips

Coriander leaves
- a few
Method
1. In a nonstick
frying
pan
heat
oil
,
add
cucumber
&
capsicum
strips.
2.
Stir
fry
on high
heat
for 1 minute.
3.
Add
fish
. After 1 minute lower
heat
&
cover
.
4.
Cook
on low
heat
for 1 ½ - 2 minutes or till
fish
is cooked.
5. In a bowl,
mix
together all other
ingredients
including
cornflour
&
mix
well.
6. If not using
wine
increase
water
to ½ cup.
7.
Add
to the
fish
in the saucepan &
cook
till sauce thickens and coats
fish
&
vegetables
well.
8. Turn
fish
very gently or it will
break
.
9.
Serve
hot, sprinkled with fresh
coriander leaves
or parsley.
