Lauki Ke Kofte

Ingredients For The Koftas
•
Lauki/Bottle gourd (peeled, grated)
- 400 grams
•
Besan/Gram flour
- 3 tablespoons
•
Salt
- as required
•
Onion (finely chopped)
- 1
•
Pudinas/Mint leaves (finely chopped)
- 1 tablespoon
•
Ginger (finely chopped)
- 1 ½ teaspoons
•
Green chillies (finely chopped)
- 2
•
Hara dhania/Green coriander (finely chopped)
- 2 tablespoons
•
Oil (for deep frying)
- as required
Ingredients For The Gravy
•
Oil
- 3 tablespoons
•
Onions (prepare: ground to a paste)
- 2
•
Ginger paste
- 1 teaspoon
•
Garlic paste
- 1 teaspoon
•
Tomato puree
- ½ cup
•
Chilly powder
- 1 teaspoon
•
Haldis/Turmeric powder
- ¼ teaspoon
•
Salt
- as required
•
Dhania/Coriander powder
- ½ teaspoon
•
Garam masala
- ½ teaspoon
•
Hara dhania/Green coriander (for garnishing)
- as required
Method
1. Squeeze out all liquid from the
lauki
and
mix
well with other kofta
ingredients
.
2. Divide into small, equal parts and
deep-fry
in hot
oil
. These koftas will not shape into perfect rounds.
3. When golden brown,
drain
and
keep
aside.
4. For the gravy,
fry
onion
paste
until golden brown.
5.
Add
ginger
-
garlic paste
and
fry
for 2-3 minutes.
6.
Add
tomato puree
and
fry
until the
oil
separates.
7.
Add
chilly powder
,
haldi
,
dhania
powder
,
salt
along with 1 cup of
hot water
and bring to a
boil
.
8.
Cook
for 5-7 minutes,
add
koftas.
9.
Cook
over medium flame for 10 minutes.
10.
Add
garam masala
and
hara dhania
,
stir
and
serve
hot with parathas or rice.
