Laajawab Kofta

Ingredients For The Koftas
•
Kaale channas/Black chick peas
- 1 cup
•
Bread slice
- 2 pieces
•
Ginger (finely chopped)
- 1 tablespoon
•
Hara dhania/Green coriander (finely chopped)
- 2 tablespoons
•
Green chillies (finely chopped)
- 1 tablespoon
•
Garam masala
- ½ teaspoon
•
Onion (finely chopped)
- 1
•
Salt
- as required
Ingredients For The Gravy
•
Onion (ground to paste)
- 1
•
Ginger paste
- ¾ teaspoon
•
Garlic paste
- ¾ teaspoon
•
Oil
- 3 tablespoons
•
Tomato puree
- ½ cup
•
Garam masala
- ½ teaspoon
•
Dhania/Coriander powder
- ½ teaspoon
•
Chilly powder
- ½ teaspoon
•
Salt
- as required
•
Hara dhania/Green coriander (for garnishing)
- as required
Method
1.
Soak
kaale channa
overnight.
Boil
with 3 cups of
water
and a little
salt
, in a pressure cooker until tender.
2.
Drain
and reserve liquid. Crumble
bread slices
,
add
to
channa
and
grind
well together, to a fine
paste
,
adding
liquid only if necessary.
3.
Mix
channa
paste
with remaining kofta
ingredients
(except
oil
). Check
seasoning
.
4. Divide
mixture
into equal parts (15-18) and shape into round balls.
5.
Heat
oil
in a kadhai and deep
fry
koftas on medium flame until golden brown.
6.
Drain
and set aside.
7. For the gravy,
heat
oil
and
fry
onion
paste
until golden.
8.
Add
ginger
-
garlic pastes
and
fry
for 2-3 minutes.
9.
Add
tomato puree
,
garam masala
and
salt
.
10.
Fry
until
oil
separates.
Add
2 cups of reserved
channa
liquid, bring to a
boil
.
11.
Cook
for 10 minutes. Just before
serving
slide the koftas carefully into the gravy.
12.
Boil
for 5-7 minutes.
Serve
hot garnished with
hara dhania
.
