Kootu Curry

Ingredients
•
White pumpkins (diced, cubed)
- 1 cup
•
Malabar yams (diced)
- 1 cup
•
Bengal gram dal
- ½ cup
•
Salt
- as required
•
Turmeric powder
- ¼ teaspoon
•
Coconut (grated, fresh)
- 2 tablespoons
•
Coconut oil
- 1 tablespoon
•
Jaggery
- a little
(optional)
Ingredients For Grinding Together
•
Red chillies
- 7
•
Cumin seeds
- ½ teaspoon
•
Coconut (grated, fresh)
- ¼ cup
Ingredients For Seasoning
•
Oil
- 2 teaspoons
•
Mustard
- ¼ teaspoon
•
Urad dal
- 1 teaspoon
•
Curry leaves
- few
Method
1.
Fry
"For
Grinding
together" in little
oil
and then
grind
with
coconut
.
2.
Boil
bengal gram dal
in enough
water
till it is half cooked.
3.
Add
yam
pieces and
cook
for few more minutes.
4. Put
pumpkin
pieces and
cook
till soft.
5.
Add
salt
,
turmeric
,
jaggery
,
ground paste
and
cook
for another two minutes.
6.
Fry
grated fresh
coconut
in
coconut oil
till it becomes golden yellow and
add
to the
curry
.
7.
Remove
from fire.
8.
Heat
little
oil
,
add
seasonings
and
mix
with
curry
.
9. Garnish with
curry leaves
.
