Kootu Curry

Ingredients

• • White pumpkins (diced, cubed) - 1 cup
• • Malabar yams (diced) - 1 cup
• • Bengal gram dal - ½ cup
• • Salt - as required
• • Turmeric powder - ¼ teaspoon
• • Coconut (grated, fresh) - 2 tablespoons
• • Coconut oil - 1 tablespoon
• • Jaggery - a little (optional)

Ingredients For Grinding Together

• • Red chillies - 7
• • Cumin seeds - ½ teaspoon
• • Coconut (grated, fresh) - ¼ cup

Ingredients For Seasoning

• • Oil - 2 teaspoons
• • Mustard - ¼ teaspoon
• • Urad dal - 1 teaspoon
• • Curry leaves - few

Method

• 1. Fry "For Grinding together" in little oil and then grind with coconut.
• 2. Boil bengal gram dal in enough water till it is half cooked.
• 3. Add yam pieces and cook for few more minutes.
• 4. Put pumpkin pieces and cook till soft.
• 5. Add salt, turmeric, jaggery, ground paste and cook for another two minutes.
• 6. Fry grated fresh coconut in coconut oil till it becomes golden yellow and add to the curry.
• 7. Remove from fire.
• 8. Heat little oil, add seasonings and mix with curry.
• 9. Garnish with curry leaves.
