Khara Masala Mutton

Ingredients

Mutton piece (leg portion)
- 1 kg
•
Pure ghee
- 3 tablespoons
•
Milk
- 2 cups
•
Dahi/Curd
- 1 cup
•
Onions (grated)
- 3
•
Ginger (finely chopped)
- 1 tablespoon
•
Garlic (finely chopped)
- 1 tablespoon
•
Haldis
- ¼ teaspoon
•
Chilly powder
- 1 ½ teaspoons
•
Dhania powder/Coriander
- 2 teaspoons
•
Jeera powder/Cumin
- 2 teaspoons
•
Dalchini/Cinnamon stick
- 2 sticks
•
Moti elaichis/Black cardamoms
- 4
•
Choti elaichis/Green cardamoms
- 6
•
Bay leaves/Tej pattas
- 4
•
Salt
- as required
•
Kesar/Saffron (prepare: dissolve in a little milk)
- a pinch
•
Coriander leaves (finely chopped)
- ½ cup
Method
1.
Mix
all the
ingredients
with the
mutton pieces
.
2. Put in a large, heavy bottomed pan with a tight fitting lid.
3.
Cover
and
simmer
until the
mutton
is tender and the gravy is quite thick.
4.
Stir
occasionally.
Serve
hot with rice or tandoori roti.
