Kathirikkai Podi Curry

Ingredients
•
Brinjal (tender)
- ½ kg
•
Oil (for frying)
- as required
•
Salt
- as required
•
Bengal gram dal
- 2 tablespoons
•
Coriander seeds
- 2 tablespoons
•
Red chillies
- 8
•
Coconut (fresh, grated)
- 1 ½ tablespoons
•
Asafoetidas (powdered)
- a little
Method
1.
Slice
brinjals
lengthwise and
soak
in
water
till required.
2.
Fry
red chillies
,
Coriander Seeds
and
dal
in
oil
.
3. Dry
roast
coconut
separately till golden.
4. Pound everything together in mixie along with
asafoetida
.
5.
Heat
oil
in a pan and
fry
brinjal
till it changes its colour.
6.
Add
powdered
ingredients
,
salt
and
mix
well.
7.
Remove
from fire.
Method To Make Fried Brinjal Curry
1.
Dice
brinjals
and 1 onion into very fine pieces.
2.
Heat
oil
in a deep curved pan and
fry
both together till it gets roasted well.
3.
Strain
off excess
oil
.
4. Sprinkle
salt
,
chilly
powder
and
serve
hot. (Garlic
chilly
powder
can also be added).
