Kasuri Methi Chicken Masala

Ingredients
•
Chicken (cut into 8 pieces)
- 800 grams
•
Curd
- ¾ cup
•
Salt
- as required
•
Oil
- 4 tablespoons
•
Red chillies (dry, broken into pieces)
- 2
•
Onions (chopped finely)
- 3
•
Garlic (chopped finely)
- 2 tablespoons
•
Ginger (chopped finely)
- 2 tablespoons
•
Green chillies (finely chopped)
- 3
•
Dhania/Coriander powder
- 1 teaspoon
•
Red chilly powder
- 1 teaspoon
•
Tomatoes (finely chopped)
- 2
•
Kasoori methis/Dried fenugreek leaves
- 4 tablespoons
Ingredients For Grounding - Whole Garam Masala (pound Roughly)

Moti elaichi/Brown cardamom
- 1
•
Choti elaichis/Green cardamoms
- 3
•
Dalchini/Cinnamon stick
- 1 inch
•

Method
1. Rub the
chicken
with
curd
&
salt
.
2.
Keep
aside to
marinate
for 30 minutes.
3.
Heat
oil
in a heavy bottomed pan.
4.
Reduce
flame,
add
broken
chillies
, chopped
onions
and pounded whole garam
masala
.
5.
Stir
fry
on medium
heat
until the
onions
turn golden brown.
6.
Add
chopped
ginger
and
garlic
.
Stir
for a minute.
Reduce
heat
.
7.
Add
green chillies
,
red chilly powder
&
coriander powder
.
Mix
.
8.
Add
tomatoes
,
stir
fry
till
oil
separates or
tomatoes
turn soft.
9.
Add
the marinated
chicken
.
Stir
fry
for 2 minutes on high flame & then lower
heat
.
10.
Cover
and
cook
till the
chicken
is tender &
masala
coats the
chicken
.
11.
Add
the
kasoori methi
.
Stir
to
mix
.
12. Garnish with
ginger
match sticks and
coriander
leaves
.
