Ingredients
•
Bitter gourd
- ¼ kg
•
Tamarind
- lemon size
•
Jaggery
- a little
•
Oil
- 1 tablespoon
•
Garlic
- 3 flakes
•
Mustard seeds
- ¼ teaspoon
•
Curry leaves
- few
•
Red chilly powder
- 1 teaspoon
•
Salt
- as required
•
Coconut (grated, fresh)
- 2 tablespoons
Method
1.
Slice
bitter gourd
into thin round pieces.
2. Sprinkle little
salt
and
keep
aside for ½ an hour.
3. Squeeze out the oozed
water
from
bitter gourd
pieces. (This procedure removes the bitterness from
bitter gourd
)
4.
Soak
tamarind
in one cup of
water
and squeeze to
get
extract from it.
5.
Cook
bitter gourd
pieces in
tamarind
extract with turmeric
powder
and
salt
.
6. When it becomes soft
add
salt
and
jaggery
.
7.
Heat
oil
and
fry
mustard seeds
, crushed
garlic
,
curry leaves
.
8.
Add
chilly
powder
in that
oil
itself and
pour
over
bitter gourd
gravy.
9.
Cook
for few more minutes.
10.
Add
grated fresh
coconut
just before
removing
from fire.
