Jerk Pineapple-Coconut Curry

Ingredients
•
Oil
- 2 teaspoons
•
Onions (chopped)
- 1 cup
•
Garlic (chopped)
- ½ teaspoon
•
Cauliflowers (cut into cubes)
- 1 cup
•
Red pepper (cut into squares)
- ½ cup
•
Green pepper (cut into squares)
- ½ cup
•
Yellow pepper (cut into squares)
- ½ cup
•
Green peas
- ¼ cup
•
Salt
- as required
•
Coconut milk
- 1 cup
•
Pineapple juice
- 1 cup
•
Red chilly powder
- 1 teaspoon
•
Jerk spice powder
- 1 teaspoon
•
Pineapples (cut into pieces)
- 1 cup
•
Corn flour (dissolved in water)
- 1 teaspoon
Method
1.
Heat
oil
in a skillet,
add
onion
and
garlic
, saute until the
onion
becomes translucent.
2.
Add
cauliflower
,
red pepper
,
green pepper
,
yellow pepper
,
green peas
,
salt
and saute for 2 minutes.
3. Then
add
coconut milk
,
pineapple juice
and close the lid and
cook
until
vegetables
are fully cooked (~10 minutes).
4.
Add
red chilly powder
and
jerk spice powder
,
cook
for 5 minutes.
5.
Add
pineapple
pieces, and dissolved
corn flour
.
Mix
well.
6.
Serve
with chapatis, rotis, rice, etc.
