Jerk Pineapple-Coconut Curry

Ingredients

• • Oil - 2 teaspoons
• • Onions (chopped) - 1 cup
• • Garlic (chopped) - ½ teaspoon
• • Cauliflowers (cut into cubes) - 1 cup
• • Red pepper (cut into squares) - ½ cup
• • Green pepper (cut into squares) - ½ cup
• • Yellow pepper (cut into squares) - ½ cup
• • Green peas - ¼ cup
• • Salt - as required
• • Coconut milk - 1 cup
• • Pineapple juice - 1 cup
• • Red chilly powder - 1 teaspoon
• • Jerk spice powder - 1 teaspoon
• • Pineapples (cut into pieces) - 1 cup
• • Corn flour (dissolved in water) - 1 teaspoon

Method

• 1. Heat oil in a skillet, add onion and garlic, saute until the onion becomes translucent.
• 2. Add cauliflower, red pepper, green pepper, yellow pepper, green peas, salt and saute for 2 minutes.
• 3. Then add coconut milk, pineapple juice and close the lid and cook until vegetables are fully cooked (~10 minutes).
• 4. Add red chilly powder and jerk spice powder, cook for 5 minutes.
• 5. Add pineapple pieces, and dissolved corn flour. Mix well.
• 6. Serve with chapatis, rotis, rice, etc.
