Ingredients

Double mutton chops
- 8
•
Papaya paste (raw)
- 3 tablespoons
•
Garlic paste
- 2 teaspoons
•
Ginger paste
- 2 teaspoons
•
White pepper powder
- 1 teaspoon
•
Paalaks/Spinach puree
- 2 tablespoons
•
Hara dhania/Green coriander (ground to paste)
- ½ cup
•
Cheese (grated)
- ½ cup
•
Malai/Cream
- ½ tablespoon
•
Oil (for basting)
- as required
Method
1. Flatten
chops
slightly with a mallet.
2.
Wash
and pat dry the
chops
. Apply the raw
papaya paste
all over them, and leave for 3-4 hours.
3.
Mix
together the remaining
ingredients
and
marinate
the
chops
in this for 4 hours.
4.
Cook
over a charcoal
grill
or on a wire rack under an electric or gas griller on low
heat
.
5. Baste frequently with
oil
turning over 3 to 4 times.
Cook
until tender.
6.
Serve
hot with pickled onions and chutney.
