Gonkura Pachadi

Ingredients
•
Gonkura leaves
- 2 cups
•
Tamarind water
- 1 tablespoon
•
Salt
- as required
•
Oil
- 2 tablespoons
•
Onions (small, peeled)
- 12
•
Onion (big, diced)
- 1
•
Sugar
- as required
•
Mustard seeds
- ½ teaspoon
•
Asafoetidas
- a pinch
Ingredients For Frying In Oil And Powder
•
Red chillies
- 25
•
Coriander seeds
- 1 tablespoon
•
Urad dal
- 1 ½ teaspoons
•
Sesame seeds
- ¾ teaspoon
•
Cumin seeds
- a pinch
Method
1. Select
gonkura
which has red stem.
2. Pluck the
leaves
alone and
wash
well.
3.
Heat
1 Tablespoon of
oil
in a deep
frying
pan and
fry
the
leaves
till it shrinks.
4.
Add
little
water
and close with a lid while
cooking
.
5.
Stir
in between when complete moisture is absorbed
remove
from fire.
6.
Add
the soaked
tamarind
in this and allow the
mixture
to cool.
7. Using a pestle pound the cooked
leaves
,
salt
, little
sugar
(to
taste
) powdered
ingredients
and pound well till everything blends well.
8.
Add
chopped big
onion
pieces and
crush
coarsely.
9.
Mix
peeled small
onion
and take it in a vessel, with little washed
water
.
10.
Heat
rest of the
oil
, season with
mustard
and
pour
on top of pachadi with little powdered
asafoetida
.
Mix
well.
11.
Serve
with hot cooked rice and ghee.
